In New York, bagels are a part of the city’s food identity. Places like Ess-a-Bagel are known for doing it the traditional way: large, dense bagels with a chewy texture, boiled before baking, and usually served with generous spreads. That style comes from Eastern European Jewish immigrants who brought bagel-making techniques to New York in the late 19th and early 20th centuries.

Alongside bagels, you’ll also see bialys — often confused with bagels but actually quite different. A bialy isn’t boiled. It’s baked, flatter, and typically filled in the center with onions or garlic instead of having a hole. It comes from Białystok, Poland, and made its way to New York through the same immigrant communities.

Bagels became mainstream in New York over time, while bialys stayed more niche — but both are still part of the city’s classic bakery culture.
