Lentils with bottle gourd and some whole wheat rotis

I used an Instant Pot to make this lentil and gourd concoction and it was the easiest thing I have done in a long time! I make this recipe from memory, but there are a ton of recipes online. Here is one.

One really does have a hard time finding bottle gourd, I bought mine at an Indian store. You may find one at your local farmers market. The lentils are called Chana Dal and they are traditionally used with bottle gourd in this preparation.

The Indian bread called Rotis you see on this plate below are healthier than the Naan bread you see at Trader Joe's. You can find them at an Indian store in the fresh or frozen section. To keep it vegan, do not put ghee on the roots. I usually make my own rotis, and if you are up to that challenge, see this recipe to make your own.
