Vegan Spinach Fruit Salad w/ Champagne Lime Vinaigrette

I first tried a version of this salad at a restaurant at La Casa Del Zorro in Borrego Springs and it was fantastic. That one was called the Kit Fox Salad.

And this one here, is my version. So here we go!

These are the salad ingredients I used:

  • 2-3 cups of baby spinach ( You can use butter Lettuce, shredded / cut as well, as you see in these photos, I have made both versions)

  • 6 pitted and cut dates

  • 6 large strawberries, cut

  • 10-12 raspberries

  • 1 large avocado, sliced

  • Handful of roasted pecans

  • 2 peeled clementines ( also called Cuties) / oranges

The salad dressing is special too.

Here are the ingredients:

  • 1/4 cup olive oil

  • 1/2 teaspoon of Dijon mustard

  • 1/2 teaspoon of minced garlic

  • 1/4 tablespoons of champagne vinegar

  • Juice of 1/2 lime

  • Salt & Pepper

Just mix it all up and serve.
