Vegetable Bulgar Pilaf served w/ yogurt

This dish is really like Chicken Soup for the Soul for the vegetarians - Comfort food!

This version has some Mediterranean influences with raisins and cashews. I made this dish for the very first time in an Instant Pot, but you can always make it in a rice cooker or a pressure cooker.



What do you need?

1 cup Bulgar

11/4 cup water

1 shallot, cut finely

2 cloves of garlic

1 cup of veggies (frozen or fresh, cauliflower tastes real good here)

1/2 potato, peeled and cut

Salt, Pepper

Handful of golden raisins and cashews


How to make it

In your Instant Pot, sauté function, sauté and brown the onions and, garlic. Then, add the cut veggies, potatoes and raisins and cashews. Then, add the bulgur, water and pressure-cook for 6 minutes.


Serve with yogurt. You can make this dish vegan by serving it with tomato soup instead of yogurt!
