Vegan Millet & sweet potato pancakes

I am so inspired by this recipe by Gena Hamshaw. Her site is 'The Full Helping'.


Finally, pancakes with sweet potatoes! I pretty much followed her recipe, except I just took the sugar out of the equation. I served them with oranges, shakes, you know...whatever you have at home! Let's get to the recipe!


What you need:

1/2 cup Millet Flour (also called Raagi)

1 cup All Purpose Flour (choose gluten-free all purpose flour if you want)

1.5 cups unsweetened Almond Milk

Vegetable Oil for making the pancakes

1 large cooked (orange) sweet potato, peeled and mashed

Baking powder

Salt (to taste)


Seasoning:

1/4 teaspoon Cinnamon

1/4 teaspoon Nutmeg

1 teaspoon Apple Cider Vinegar

How to make

In one bowl, whisk all the dry ingredients together: Flours, baking powder, salt and the seasonings. In a separate bowl, whisk all the wet ingredients together: Vinegar, almond milk, oil and sweet potato puree. Then empty out the wet ingredients into the dry ingredients bowl and mix everything nicely until no lumps remain. Let the batter rest for 10 minutes.


Oil a pan, and put it on the gas at medium. Spoon a small quantity of the batter on the gas. Wait until the bottom of the pancake is firm and then flip the pancake and allow it cook on the other side for 1-2 minutes. Transfer to cooling rack before serving.


I like to serve these pancakes with a spicier relish. But you can always serve them sweet too!
