Savory Teff Pancakes: A Nutritious Twist on Ethiopian Tradition

Teff, the smallest grain in the world, hailing from Ethiopia, has been making waves in the culinary world due to its exceptional nutritional value and gluten-free nature. Not only is it a staple in Ethiopian cuisine, particularly in making injeras (traditional Ethiopian bread), but it has also been credited with contributing to the success of Ethiopian long-distance runners, earning its place in the superfood category.

Recently, my culinary journey led me to discover Teff flour at my local Whole Foods, inspiring me to experiment in the kitchen. Drawing inspiration from Carrie Vandelac's blog on Mind Body Green, I decided to create my own version of Teff pancakes, with a savory twist. As someone who prefers savory over sweet and strives to limit sugar intake, I opted to add onions and jalapeños to my recipe, steering clear of the traditional sweet toppings like sugar or maple syrup.


Here's what you need for these delectable Savory Teff Pancakes:

Ingredients:

  • 2 cups Teff flour

  • 1 tablespoon Baking powder

  • 1 tablespoon Arrowroot powder (or cornflour as a substitute)

  • Salt, to taste

  • 2 tablespoons Coconut oil (any oil of your choice works)

  • 2 cups Unsweetened Almond milk

  • Vanilla extract, a splash

  • 1 teaspoon Cinnamon

  • 1/4 cup finely chopped onions

  • 1/2 Jalapeño, finely chopped (add more for an extra kick!)




Instructions:

  1. Prepare the Dry Ingredients: In a bowl, mix Teff flour, baking powder, arrowroot powder, and a pinch of salt.

  2. Add the Flavors: Incorporate coconut oil, almond milk, vanilla extract, cinnamon, chopped onions, and jalapeños into the dry mixture. Mix thoroughly until you achieve a smooth pancake batter-like consistency. Make sure the batter is not too runny.

  3. Cooking the Pancakes: Heat a pan over medium heat and lightly oil it. Spoon the batter onto the pan, creating pancakes of your desired size. Cook until the bottom is golden brown and the edges are crisp. Carefully flip the pancakes and cook the other side until it achieves the same golden perfection.

  4. Serve and Enjoy: Plate your warm savory Teff pancakes and pair them with a refreshing smoothie for a wholesome and satisfying meal.
