Creamed Bulgar & Quinoa w/ Spinach

This is amazing stuff and easy to make.

What you need (Serves 2)

1 tablespoon of oil

1/2 onion, thin sliced

1 cup mix of bulgar and quinoa

2 cups vegetable stock

1 cup of chopped spinach

1 cup of almond milk

Pinch of salt and pepper to season per your liking.

Start by sautéing the onion in the oil. When the onion pieces look translucent, add the spinach and let it wilt, about 3 minutes.

Then add the bulgar and quinoa mix and roast it for a little while (keep the heat at low or you will burn it). Roasting brings out the nuttiness of the quinoa. Add the salt and pepper.

Then add the stock, increase the heat, add the milk. Then turn down the heat to LOW and let the quinoa and bulgur cook, covered for about 10 minutes and then turn off the heat. Let it sit covered for about 15 minutes.
