Easy Filo Pastry w/ Vegetarian stuffing

Opa~!! We are going Greek today for brunch! I didn't think my family would enjoy these as much but they were all gone in a few minutes despite being piping hot! The trick is to cut the filo sheets into smaller pieces, and then to layer them with butter as you start to situate them into baking cups or muffin trays. Then put your filling and close up those cups so that they start looking like little packages.

My vegetable filling was a mashed and spiced mixture of potatoes, carrots, peas and cheese. Bake at 350 for 30 minutes, and check once to ensure they are not burning! Be generous with the butter between the sheets, it makes a difference.
