Gosh, we are all nuts about this one.
This recipe is all about tapioca! It is paleo-friendly and gluten-free. And its mostly starch from cassava root. And it is great for breakfast or lunch.
This is how you make it!
What you need:
1 cup of small pearl tapioca
1 cup of peanuts, crushed
2 small potatoes, cut peeled
Salt
Cumin seeds
Green chillies (red chili powder is OK too)
Cilantro for garnish
Sugar
Lemon
How to make it:
Soak a cup of tapioca beads in water overnight, and then squeezed all the water out
Peel and cut two medium-sized potatoes finely.
Start with heating oil in a pan along with some cumin seeds. Then throw the potatoes in and cook them - you may have to cover to cook the potatoes!
Once they are cooked, throw in a cup of crushed peanuts and roast them for a bit until they brown
Then add the tapioca beads that you squeezed all that water out of. Season with salt, pepper, chili powder, sugar and lemon.
Sprinkle some cilantro and serve!
