Vegan + Gluten-free Red Lentil mini pancakes w/ sesame seeds

This is a real simple recipe.

  • I soaked a cup of red lentils in water for a few hours

  • Then blended it to make it a smooth mixture

  • Seasoned with salt, pepper, onion and garlic powder, cayenne and paprika.

  • Cooked them on the griddle with coconut oil and added some sesame seeds while they were cooking
