Salad Greens w/Creamy avocado dressing

For today's salad:

- A mix of salad greens such as kale, baby bokchoy and spinach, roughly cut

- 1-2 mini Persian cucumbers, cut finely

- 1 pear, washed, cut into cubes

- Handful of nuts (pistachios, walnuts) and cranberries

- Cooked and seasoned pinto beans (omit if you want!)

- Homemade croutons

- Shredded carrots

- Fresh or frozen corn, lightly sautéd


I am so excited to share this dressing recipe. I made it today and it was just delicious. This dressing is creamy but vegan.


For the dressing:

2 ripe avocados

2-3 tablespoons of lemon or lime

1/4 cup of almond milk (replace with water if you want it less creamy)

Handful of fresh cilantro, washed, chopped

2 garlic cloves

Drizzle of honey or maple (optional)

Drizzle of olive oil

Salt and Pepper


In a food processor, combine all of the above ingredients and process until all the ingredients have blended well. Add salt and pepper to taste and adjust the seasoning.
