Vegan Peanut and Tapioca Cakes

Gosh, we are all nuts about this one.

This recipe is all about tapioca! It is paleo-friendly and gluten-free. And its mostly starch from cassava root. And it is great for breakfast or lunch.

This is how you make it!

What you need:

1 cup of small pearl tapioca

1 cup of peanuts, crushed

2 small potatoes, cut peeled

Salt

Cumin seeds

Green chillies (red chili powder is OK too)

Cilantro for garnish

Sugar

Lemon

How to make it:

  • Soak a cup of tapioca beads in water overnight, and then squeezed all the water out

  • Peel and cut two medium-sized potatoes finely.

  • Start with heating oil in a pan along with some cumin seeds. Then throw the potatoes in and cook them - you may have to cover to cook the potatoes!

  • Once they are cooked, throw in a cup of crushed peanuts and roast them for a bit until they brown

  • Then add the tapioca beads that you squeezed all that water out of. Season with salt, pepper, chili powder, sugar and lemon.

  • Sprinkle some cilantro and serve!
